The Fine Cheese Co., a maturer, wholesaler, retailer and exporter of artisan cheeses, has added an ewes’ milk and an oak-smoked Cheddar to its classic full-flavoured Cheddar and nutty goats’ milk Cheddar pairing to create a range of four Cheddars from three milks. The waxed format makes these great gifts.
Hand-made in Dorset using traditional Cheddar methods, the Ewes’ Milk Cheddar has a texture that’s firm, but will melt in the mouth. The delicate ewes’ milk has an aromatic flavour reminiscent of the lush pastures in the South West, tasting fresh and bright, yet balanced, with a long, complex finish.
The Oak-Smoked Cheddar is made using the traditional method of stacking the curds by hand. The finishes are then cold smoked over real oak chips, which give it a natural, balanced smoke flavour reminiscent of the wood with no harsh notes. The smoke is delicately judged to allow the mature, farmhouse character of the Cheddar to shine through.
Weighing in at 200g each, every cheese in the Waxed Cheddar Collection makes for a perfect stocking filler, or starting point for a cheese gift with The Fine Cheese Co. crackers and partners for cheese.
Ann-Marie Dyas, Cheesemonger and Co-Founder at The Fine Cheese Co., says:
“If you love Cheddar, this fun set gives you your four perfect ways to enjoy your favourite cheese”.”
