Field fresh Select Mix Vegetables Rosti

Serves 4 (makes 8 patties) – ready in 40mins

Ingredients

  • 375g (½ pack) Birds Eye Field Fresh Select Mix Vegetables
  • 5 medium sized potatoes – peeled
  • 2 tbsp plain flour
  • 1 medium onion – grated
  • 1 tbsp vegetable oil
  • Seasoning

Rosti

To prepare:

  1. Cook the Field Fresh Select Mix Vegetables as per pack instructions
  2. Pre- heat an oven to 200ºC/ gas mark 6
  3. Grate the potatoes and squeeze out some of the liquor
  4. Add the flour, onions and Select Mixed Vegetables, mix well and season to taste
  5. Form the mixture into 8 patties
  6. Heat the oil in a non- stick pan and fry the patties for 2 minutes on each side
  7. Place the patties on a baking sheet and cook for a further 10 minutes in the pre-heated oven

Approx per serving (2 patties)

300 Calories and 9g Fat

Corn Chowder

Serves 4 – ready in 40mins

Ingredients

  • 375g (½ pack) Birds Eye Field Fresh Supersweet Sweet corn
  • 2 rashers of streaky bacon- chopped
  • 1 tbsp olive oil
  • 1 large onion- diced
  • 1 small garlic clove- crushed
  • 1 large potato- peeled and diced
  • 2 tbsp plain flour
  • 600ml semi skimmed milk
  • 1 bay leaf
  • seasoning

Sweetcorn Chowder

To prepare:

1. Fry the bacon until crisp in the olive oil

2. Add the onions, cook until soft and add the garlic

3. Add the potatoes and flour, mixing together over heat

4. Add the milk and bay leaf and stir. Simmer for 5 minutes, stirring all the time

5. Add the Sweet corn and cook for a further 10 minutes

6. Season to taste and don’t forget to remove the bay leaf before serving

Very Fine Beans with Cherry Tomatoes and Toasted Pine Nuts

Serves 4 – ready in 20mins

Ingredients

  • 375g Birds Eye Very Fine Green Beans
  • 1 small diced onion
  • 1 tbsp olive oil
  • 200g Baby cherry tomatoes
  • 2 cloves of garlic –crushed
  • ½ tsp balsamic vinegar
  • 1 tsp light brown sugar
  • 8 sage leaves –chopped
  • 2 tbsp toasted pine nuts

Beans with cherry tomatoes

To prepare:

1. Cook the beans as per instructions

2. Cook the onions and garlic in the olive oil until soft

3. Add the cherry tomatoes and cook in a pan on medium heat for 3mins, until the skins start to split

4. Add the sugar and balsamic vinegar

5. Lightly toast the pine nuts

6. Place the beans in a warmed bowl, add the tomato mixture, pine nuts and sage leaves

7. Serve warm

Field Fresh Select Mix Vegetables with Green Thai sauce

Serves 2 – ready in 20mins

Ingredients

  • 375g (½ pack) Birds Eye Select Mixed Vegetables
  • 1 medium onion – sliced
  • 1 tbsp vegetable oil
  • 1 heaped tbsp Green Thai curry paste
  • 25mm peeled fresh ginger
  • 1 can reduced fat coconut milk
  • Pinch ground cumin
  • 1 handful of chopped coriander leaves
  • Seasoning

Thai Curry

To prepare:

1. Cook the onion in the vegetable oil until soft

2. Add the Green Thai Curry paste, fresh ginger and coconut milk and bring to the boil

3. Add the Field Fresh Select Mixed vegetables and cook for 3 minutes

4. Finish off with a pinch of ground cumin and a handful of chopped coriander leaves

5. Season to taste

Field fresh Select Mix Vegetables Frittata

Serves 4 – ready in 15mins

Ingredients

  • 375g (½ pack) Birds Eye Field Fresh Select Mix Vegetables
  • 1 tbsp olive oil
  • 2 rashers of bacon- diced
  • 4 sundried tomatoes – chopped
  • 5 large eggs – beaten
  • 50g grated cheese
  • Seasoning

Vegetable Fritata

To prepare:

1. Cook the Field Fresh Select Mix Vegetables as per pack instructions

2. Add the oil to a pan with the diced bacon and cook until crisp

3. Add the Field fresh Vegetables and chopped sundried tomatoes and mix together

4. Pour over the seasoned eggs and allow to set over a gentle heat

5. Add the grated cheese to the top and melt under the grill

Creamy Sweetcorn Soup

Serves 2 – ready in 15mins

Ingredients

  • 375g Birds Eye Supersweet Sweetcorn
  • 25g butter
  • 1 vegetable stock cube
  • 200ml hot water
  • Pinch cayenne pepper
  • 50g reduced fat cream
  • Seasoning

Sweetcorn soup

Optional

  • 25g hot and sweet jalapenos to be blended with the corn
  • 5g maple syrup added to top

To prepare:

1. Cook the sweetcorn with butter in a pan for 5 minutes

2. Mix the stock cube with the hot water, then add to the corn

3. Add the cayenne and season

4. Return to the heat for a further 5 minutes

5. Blend until smooth, adding the cream during the blending

Optional- blend with the jalapenos and serve with maple syrup on top

Country Mixed Vegetable Pesto Tarts with Mozzarella

Serves 4 – ready in 35mins

Ingredients

  • 375g (½ pack) Birds Eye Country Mixed Vegetables
  • 50g  pesto sauce
  • 300g ready roll puff pastry
  • 1 mozzarella ball- sliced
  • 1 egg yolk
  • 8 cherry tomatoes
  • seasoning

vegetable tart

To prepare:

1. Pre-heat an oven to 220ºC/gas mark 7

2. Cook the Country Mix vegetables as per pack instructions and mix with the pesto

3. Cut the pastry into four 12×12 cm squares, pricking the middle of each one with a fork

4. Cut out 1×12 cm strips of pastry and place on the edges of each square

5. Eggs wash each piece to stick the pastry to the squares, then egg wash the top of each strip

6. Place in a pre-heated oven at 220ºC/gas mark 7 for 10mins

7. Remove from the oven

8. Place the pesto mix and 2 tomatoes in each tart case, top with sliced mozzarella and return to the oven to bake at 220ºC/gas mark 7 for a further 10mins

Country Mixed Vegetable Curry

Serves 4 – ready in 15mins

Ingredients

  • 375g (½ pack) Birds Eye Country Mixed Vegetables
  • ½ large onion- sliced
  • 1 tbsp sunflower oil
  • 2 dsp Korma curry paste
  • ½ can low fat coconut milk

Vegetable Curry

To prepare:

1. Cook the Country Mix vegetables as per pack instructions and drain

2. Cook the sliced onion until golden brown

3. Add the vegetables, curry paste and coconut milk to the onion pan and coat well

4. Bring to the boil and serve

Tip – freeze the remainder of the coconut milk in an ice cube tray, for use at a later date.
