HIGHLAND GAME SUPPLIES LONDON PUB CHAIN
The award-winning venison specialist has secured a year’s contract to supply Scottish wild venison to the Young’s pub group in London.
The Dundee based company will now provide120 pubs across the group with quality venison cuts. Dishes such as venison stroganoff, venison medallions with melting onions and cranberry sausages etc will be added to their menus.
Young’s introduced the award-winning venison to its menu as part of British Food Fortnight in September. However due to the popularity of the venison dishes the group decided to extend the contract for another 12 months.
Author and cookery writer Maxine Clark and Highland Game’s Christian Nissen hosted two successful master class sessions in London and Littleton as part of the British Food Fortnight. Around twenty customers enjoyed a cookery demonstration by Maxine and then sampled some of the quality game available on the specially created BFF menu.
To celebrate the success of the venison dishes during the fortnight two chefs from Young’s were given the chance to take part in a deer stalking event on the Invermark Estate, Angus with Christian Nissen. The chefs were given the ‘hill to plate’ experience and learned how to source Scottish wild venison amongst some of Scotland’s most spectacular countryside.
Christian Nissen, managing director and owner of Highland Game said: “We invited members of Young’s to visit our premises during Scottish Food Fortnight and following on from this visit we were asked to supply venison for their British Food Fortnight menu. However since then we have been offered another contract with Young’s which is just fantastic news for Highland Game, to supply a large chain of this size south of the border is quite an achievement.”

The venison is collected from specially selected deer larders throughout the Highlands and is then processed at their superior processing plant in Dundee.
