YELLOW TAIL AMBERJACK LAUNCHED BY M & J SEAFOOD

M&J Seafood has added fresh yellowtail amberjack, also known as yellowtail kingfish to its product list. With under utilised species increasingly demanded by ever more discerning customers, yellowtail amberjack is a sustainable product which relieves the pressure of over fishing on more well-known species.

yellowtailWith an aim to preserve local fish stocks of indigenous species, yellowtail amberjack is reared in on-shore hatcheries from second-generation hatchery-raised brood stock. Fingerlings are then grown in off-shore sea cages in the pristine ocean environment of the Spencer Gulf, South Australia. Cages are positioned away from the coastline and miles away from heavily populated estuarine environments or other aquaculture ventures. The use of natural feeds and minimal stock densities in native waters delivers fish that are of a superb quality and wholly sustainable.

The pale pink flesh is sweet with a rich flavour and provides meaty fillets that are far superior to those grown in the wild. With a cleaner flavour, optimal fat content, firmer texture and higher yield, yellowtail amberjack is popular in both Mediterranean and Japanese cuisine. Yellowtail amberjack offers great versatility in both cooked and raw dishes – best suited to grilling, barbecuing or pan frying, it is also wonderful for making sushi, sashimi or carpaccio.
