NEW BRITISH BUFFALO MOZZARELLA LAUNCHED

Mozzarella cheese, originally from Campania in southern Italy, is now available to the UK consumer at its freshest, direct from water buffaloes reared in rural Hampshire.

British buffalo mozzarella will be available from the 19th of October 2009 throughout the UK in Waitrose supermarkets, traveling only miles from its Hampshire home up and down the country.

The British – a nation of cheese makers, our Stilton and Cheddar are famous world over, have now conquered the most delicious of Italian cheeses, previously impossible to replicate – however unlike our Italian counterparts, whose Buffalo don’t graze on open pastures, the Laverstoke Park mozzarella is made from the milk of the largest herd of water buffalo in the UK – some 1,600 strong.

Creator of Laverstoke Park Farm Jody Scheckter comments “Our Buffalo live outside nearly all year round enjoying the fresh air and are nourished on the farms richest resource pastures planted with a nutrient rich mixed salad of 31 different herbs, clovers and grasses, planted following our founding principle that all good food and indeed our health depends upon the food our animals eat. We believe you are not what you eat, but what your animals eat and that the soil is 90% of farming. To this end we have invested heavily in producing the best soil possible and our laboratory is dedicated to ensuring the finest biodynamic conditions”.

Although a very British mozzarella, its Italian authenticity is without question. Working alongside Laverstoke’s Dairy Processing Manager, Simon Shepherd, is Luca de Rosa from Campania – whose 21 years of experience in the art of creating mozzarella brings all the Italian expertise and flavour that makes Laverstoke’s mozzarella so unique here in Britain. Furthering the authenticity is the custom-made equipment direct from Italy used to produce the mozzarella. Jodie’s previous life as Formula One World Champion for Ferrari afforded him “special” consideration by the Italian workforce.

Above all, producing mozzarella in the UK means we can eat  mozzarella the way the Italians do – at its freshest and not after it has taken a week to be imported to our shelves, which is why Laverstoke Park deliver their cheese immediately after production. This way we can taste the mozzarella as it should be, at room temperature, cut it in half, with the buffalo milk oozing out offering a rich, moist textured succulent mouth feel.

Laverstoke’s mozzarella is available in 250g balls and supplied in pots of 125g balls, or 50g balls – the perfect size for appetizers.
