ORGANIC CAKE AND GLUTEN FREE BREAK SWEEPS THE BOARD AT FREE FROM AWARDS

Delicious carrot cake which is light and moist, and bread which tastes of bread might not seem the subjects of awards, but it’s the fact that these staples can now be eaten by a substantial section of the population without causing them to break out in bumps or have their tongues swell alarmingly, causing them to dial 999, which is a cause for celebration.

Foods which are “Free From” the ingredients which can cause allergy and intolerance are much more available nowadays.  Gone are the times when people with genuine and proven reactions to certain foods such as gluten, nuts, dairy products and even mustard had to forage in dim corners to find the convenient foods which most of us take for granted.

Nowadays most stores have “Free From” sections, or a very good range of “Free From” foods which have had the problem ingredients removed and are re-formulated and processed differently to achieve a good result.

This is the second year the “Free From” awards has been run.  It is organised by Foods Matter which also publishes a monthly magazine that has become the bible for people with allergy and intolerance.

The selection of the entrants for this prestigious award is meticulous, and the judging is run with the highest rigour and is based on important criteria.  Not just the appearance, texture, aroma and flavour of the final result, but most importantly the complexity of making these important staples considering that important components removed.  Imagine making a cream cheese that tastes just like Philadelphia, but doesn’t contain lactose … it’s not easy!  Imagine a break with a good crust and a light crumb, yet no gluten which can cause illness to some people.  That’s not easy either.
