FLAVOUR FORECASTING AND HORIZON SCANNING

Spice company Schwartz (& McCormick) has grilled a wide selection of top chefs in order to come up with some very intriguing ideas on upcoming flavour trends.  To come up with these observations they interviewed and worked with fifteen top European foodie thought leaders.

The trends they have identified are Inspirational & Modern, Back To Basics, Health & Wellness, Thrift Cuisine, and Indulgence.

To come up with these directions they went to France and interviewed and observed Gontran Cherrier, Alexandre Gouthier, Flora Mikula, Laurence Solomon, and David Zuddas.  Here in the UK they worked with Matthew Drennan, Jill Dupleix, Tom Kime, Rowley Leigh and Tom Norrington-Davies.  Other contributors are Jose Avillez, Portugal. Sergi Arola, Spain. Andreas Caminada, Switzerland. and Viki Geunes, Belgium.
