Ocean Spray launches natural purée
Ocean Spray’s Ingredient Technology Group has developed a cranberry purée made from 100% natural ingredients.
The versatile product, which can be used in savoury and sweet recipes including fruit smoothies, is a response to consumers’ growing preference for natural products with health benefits.
The puree has all the qualities of fresh cranberries in a form perfect to add to different foods. Ocean Spray claims whether its new product is spread on cakes or flavour ice-cream, the rich texture and intense flavour will offer a modern and healthy twist to traditional recipes.
Cranberries are full of fibre and low in sugar so they are the perfect choice for people looking for a fruity health boost. The puree has no artificial ingredients.
Their high acidity means they blend well with other fruits which Ocean Spray says makes them perfect for smoothies and syrups.
Kristen Girard, principal food scientist at Ocean Spray, said: "The vibrant red colour of the cranberry is maintained throughout processing. As a glaze or filling, the formulation provides cakes and pastries with fruity appeal and the purée’s gelling properties make it perfect for fruit preparations."
