New range of top cocoa liquors

Top-quality cocoa beans from countries including Ghana, the Ivory Coast and Papua New Guinea are being used for ADM`s new premium-range De Zaan cocoa liquors.

They will give chocolate makers a wider choice of raw materials for products including ice cream and those with a high cocoa content.

For example, De Zaan 888 NL cocoa liquor is based on beans originating from Papua New Guinea which provide a particularly fine flavour.

For customers wanting a slightly darker colour, 850 DL is a slightly alkalised liquor with different roasting profiles that may also reduce conching time.

Flavour is a complicated process, dependent on the type of cocoa bean used, its genetic background and growing conditions and the flavour formation during processing.
