Natural way to cut salt in foods

Food manufacturers will be able to create healthier, reduced-salt versions of a wide range of applications thanks to a new, natural product developed by industry experts Synergy.

Saporesse Plus is an addition to Synergy’s existing range of lactic yeast extracts and promises fewer dairy notes, which means it is suitable for a broader range of food applications.

The original Saporesse is better suited to products with a dairy flavour, such as cheese sauces, but Saporesse Plus allows manufacturers to produce low-salt versions of a much wider range of foods, including soups, sauces, ready meals, snacks, savoury pastries and coatings.

It can help to reduce the salt content of products by as much as 20%, Synergy claims. It also removes the need for artificial ingredients, such as MSG and HVP, and has no meaty, beer base or bitterness flavours.

Ciaran Lynch, new product development manager at Synergy, said: "Many of our customers have been modifying their products to reach the FSA targets on salt content.

"We developed Saporesse Plus to cater for applications that require a weaker dairy profile. It has the same potential for salt-reduction and allows manufacturers to extend the healthy options to additional product lines."
