Salt reduction limits reached, says cake expert
The maximum amount of salt that can be removed from cakes and biscuits has been reached by UK food manufacturers, an expert has said.
Speaking at the Caobisco Invites – Chocolate, Biscuit and Confectionery products in a 21st Century balanced diet conference, Barbara Gallani from the Food and Drink Federation (FDF) stated that salt levels in biscuits and cakes have dropped considerably in recent years.
The FDF’s biscuit, cake, chocolate and confectionery sector manager told delegates in Brussels that the salt levels in biscuits and cakes have fallen by between 16 and 50 per cent in the past two years.
However, Ms Gallani explained that the amount of salt removed from each product fluctuates, as the recipe for such items can vary.
“Many UK biscuits and cakes are now at their limit regarding salt reduction, both technically and in terms of taste and texture,” she said.
Vegetarian burgers and sausages may contain more salt than their meaty equivalents despite being a seemingly healthier barbeque option, Consensus Action on Salt and Health recently warned.
