Tapioca-based fat replacement innovation

Ulrick & Short has stated that it can help food manufacturers enter new categories and markets with its tapioca-based fat replacement product.

Delyte5 and Delyte6 are products from the company that promise to reduce fat content and “clean up” the product label.

The fat replacement products are suitable for cakes or even smoother products such as butter cream.

One company, Bentleys Snack Cakes, has already trialed the product has seen success, Ulrick & Short claim.

Peter Bentley, director of Bentleys, said that his firm is now able to “confidently” make its mark in the reduced fat category.

“We have been thoroughly impressed with the Delyte products which were extremely flexible and easy to work into our recipes. We have been delighted that we have maintained, if not improved, the quality of all products which now feature Delyte,” he said.

Last year, Ulrick & Short reported success at a blind testing event of fat replacements products held with the Regional Food Group for Yorkshire & Humber.
