Ramsay: Unseasonal vegetable laws will lead to innovation
Restricting the vegetables that chefs can use will produce a culture of innovative food, TV chef Gordon Ramsay has suggested.
According to the star of the F Word, restaurants should not be allowed to serve vegetables that are out of season and if this was enforced they would be forced to be more creative with local produce.
Ramsay told the BBC that he would be speaking to Gordon Brown about the possibility of introducing legislation on the matter.
“Chefs should be fined if they haven’t got ingredients in season on their menu,” the Michelin-starred chef suggested.
“I don’t want to see asparagus on in the middle of December. I don’t want to see strawberries from Kenya in the middle of March. I want to see it home grown.”
In response to these suggestions, managing director of Compass Group’s Restaurant Associates Jason Leek told CatererSearch that many consumers are already leaning towards a trend of seasonal produce.
